Paella
Recipe by3 tbsp olive oil
1 small onion diced
2 garlic cloves finely chopped
1 red pepper finely diced
4 ripe vine tomatoes grated
fresh thyme
smoked paprika
turmeric
400g paella rice
1.5 litre stock
optional
a handful of frozen peas
lemons to serve
Chicken
prawns/shrimp
crab
mussels
fish
squid
chorizo
yellow/orange peppers
montoute/green beans
mushrooms
cashew nuts
Prep. Time → 15 min
Cook Time → 15-20 min
1. Cook the onion, garlic and pepper for 1-2 minutes in some olive oil.
2. Add the tomatoes, thyme, turmeric and smoked paprika and cook for a couple of minutes,
3. Add the meat/fish, cook until browned and almost cooked through.
4. Tip in the rice, stir letting the rice absorb any juices/oil.
5. Add some stock and cook for 10-15 minutes, topping up the stock as needed.
6. Add any prawns, mussels and clams and cook for 3-4 minutes.
7. Stir in the peas (and lemon juice) and season to taste.
