Panna cotta cups with berry sauce
Recipe bypanna cotta
15ml gelatin
45ml cold water
250ml cream cheese
250ml cream
180ml sugar
80ml milk
1 vanilla pod, slit open
berry sauce
70g frozen berries (blueberries, blackberries, strawberries or a mixture)
30ml castor sugar
1 stick cinnamon
1 rooibos teabag
fresh mint leaves
Prep. Time → 15 min
Cook Time → 10 min
1. Panna Cotta:
sprinkle gelatin over cold water and leave a few minutes until gelatin becomes spongy
2. heat cream cheese, cream, sugar, milk and vanilla in saucepan and stir until sugar dissolves
3. microwave gelatin for few seconds until clarifies, remove pod from cream mixture and stir in the gelatin
4. Pour mixture into small cups and refrigerate
5. Berry sauce:
Heat ingredients and cook until berries are soft.
6. Remove teabag and cinnamon stick and mash berries or pulse them in food processor until smooth
7. top panna cotta with berry sauce and garnish with fresh mint
