White Fish fillet of your choice (Try to go with fillets that don't have skin)
1/2 cup all-purpose flour
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper
3 egg whites
1 cup grated Parmesan
1 cup seasoned bread crumbs
Olive oil, for drizzling

Cook Time → 13-15 min

1. Pre-heat oven to 450. Spray baking sheet with cooking spray. Cut fillets into thin 2-3 in. pieces, set aside. Take three separate bowls. In first: combine flour, salt, and pepper. In second: beat three egg whites until frothy. In third: combine bread crumbs and Parmesan cheese. Create a sort of assembly line with already cut fish on one side followed by seasoned flour, egg whites, cheese and bread crumb mixture, and then the greased baking sheet or pan.

2. Coat the piece of fish in the flour, tapping it to knock off any extra flour. Then drop into the egg whites shake off any extra that might still be hanging on. Then dredge in the cheese and bread crumb mixture and drop it down onto the baking sheet. Continue with each piece of fish in turn. Drizzle the tops of the sticks with oil.

3. Bake at 450 for about 13-15 minutes if the fish is thawed. The fish should bake until golden brown
