Pastry cases with Pate and cucumber strips of Forbidden - Recipefy

250g pork (fillet, loin or neck)
salt and freshly ground black pepper, to taste
juice of 1 lemon
15ml soy sauce
15ml tomato sauce
15ml chutney
15ml olive oil
150g cream cheese
30ml fresh coriander, chopped
15ml sherry (In south africa I use Old Brown brand)
quarter cucumber, cut into thin strips
12 ready made pastry cases

Prep. Time → 15 min

Cook Time → 50 min

1. preheat oven to 160C

2. season pork and put in small oven-proof dish

3. Mix lemon juice, soy sauce, tomato sauce, chutney and olive oil and pour over meat

4. cover with tinfoil and cook in oven for 30min. Remove tinfoil and roast for about 20min. Leave to cool

5. place cooled meat, pan juices, cream cheese, coriander and sherry in a food processor and pulse till it forms a smooth paste

6. Pile cucumber into ready made pastry cases and top each with a spoonful of pate
