Pea, pear and watercress soup sw

- 2 medium onions, chopped
- Fry Light
- Salt
- 500gm (1lb 2oz) frozen peas
- 3 pears, peeled and chopped (6 Syns when cooked)
- 1ltr (2 pints) vegetable stock, made with Vecon
- 1 bag (80gm) fresh watercress
1. Method
1. Sweat the onions in Fry Light with a pinch of salt.
2. When soft, add the peas and pears.
3. Saute for 2-3 minutes. Add the stock and then simmer for 5 minutes.
4. Liquidise until smooth then chill.
5. When cold add the watercress and liquidise, then strain through a sieve for a smooth consistency.
6. Serve with a crusty wholemeal roll taken as a Healthy Extra.
