Peach Caprese Grilled Chicken of Bobby Keillor - Recipefy

4 boneless, skinless chicken breasts
2 TBSP olive oil
1 tsp salt
1/2 tsp pepper
8 oz fresh mozzarella, but into 1/2" slices
4 medium peaches, pitted & sliced
1/2 Cup fresh basil
Balsamic glaze

Prep. Time → 20 min

Cook Time → 20 min

1. Place chicken in ziploc bag and pound to have even thinner pieces.

2. Rub the olive oil into the chicken breasts and season both sides with salt & pepper.

3. Place the chicken breasts on the grill. Cook for 5-8 minutes per side, until cooked through.

4. * If you want to also grill the peaches: Spray the peaches with olive oil cooking spray and place them on the grill, turning once, until charred in spots, 5 to 6 minutes. Set aside & let cool.

5. Place the grilled chicken breasts on a platter. Top with an even layer of mozzarella slices. Spread the peach slices over the mozzarella.

6. Drizzle the balsamic glaze on top and garnish with fresh basil.
