Peach chutney
Recipe by4 lbs peaches, peeled
1 cup seedless raisins
2 cloves garlic, minced
1/2 cup chopped onion
2/3 cup chopped crystallized ginger
1-2 tbsp chilli powder
1 tbsp mustard seeds
1 tsp curry powder
1 1/2 tsp salt
4 tbsp pickling spice, tied in bag
4 cups cider vinegar
4 1/2 cups brown sugar
1. Slice peaches and combine with remaining ingredients in large bowl.
2. Cover and let stand overnight.
3. Turn into heavy kettle. Bring to boil, simmer uncovered until chutney is desired consistency (original recipe says 45 mins, mine needs double that), Stir often.
4. Remove spice bag. Ladle into hot, sterilized jars. Seal. Makes 4 pints
