Peanut butter cupcakes

Ingredients for 24 cupcakes
2 cups brown sugar
1/2 cup shortening (or Earth Balance shortening)
1 cup peanut butter
2 eggs (or egg replacer)
1 tsp vanilla
2 1/2 cup flour
1 tsp baking soda
2 tsp cream of tartar
1 pinch salt
4 TB milk (or plain soy milk)

Directions
1. Preheat oven to 350 degrees
2. Mix the brown sugar, shortening, and PB until light and fluffy
3. Beat in the eggs one at a time
4. Stir in vanilla
5. Combine flour, cream of tartar, baking soda & salt- mix alternately with milk
6. Bake 15-20 minutes
