Pecan squares
Recipe byCRUST
1 1/4 LB butter (or Earth Balance) at room temperature
3/4 cup sugar
3 eggs
3/4 tsp vanilla
4 1/2 cup flour
1/2 tsp baking powder
1/4 tsp salt
TOPPING
1 LB butter (or Earth Balance
1 cup honey (or maple syrup)
3 cups light brown sugar
1 tsp lemon zest
1 tsp orange zest
1/4 cup heavy cream (or soy creamer)
2 LB pecans
Prep. Time → 20 min
Cook Time → 45 min
1. Preheat oven 350 degrees
2. CRUST:
Beat the butter & sugar 3 minutes
3. Add eggs & vanilla
4. Sift all dry ingredients in a separate bowl
5. Press dough in ungreased 18 x 12 baking sheet
6. Bake crust 15 minutes
7. TOPPING:
Combine butter, honey, brown sugar & zest in a sauce pan
8. Cook low heat stir with wooden spoon; cook until butter melted
9. Raise heat to a boil for 3 minutes
10. Remove from heat; stir in cream & pecans
11. Pour evenly over crust
12. Bake 25-30 minutes
13. Make sure they are completely cooled before you attempt to cut the squares. It helps to use a sharp knife that has been run under hot water.
