Penne alla vodka
Recipe by1 Tbsp Olive oil
400g Penne Pasta
2 Tbsp Tomatoe Puree
100ml Double Cream
2 Garlic Cloves - Crushed
1 Red Chilli - De-seeded and chopped (Seeds in if you like it Hot)
50g Parmesan Cheese - Grated
3 Tbsp Vodka
1 Tbsp Parsley - Chopped
Prep. Time → 5 min
Cook Time → 10 min
1. Bring a large pan of salted water to the boil and cook the pasta as instructed on the packet
2. In a hot frying pan add the olive oil
3. Add Chilli and garlic and fry for 2 minutes
4. Add the Tomatoe Puree and cook it out for 1 minute
5. Take the pan off the heat and Add the Double cream and stir
6. Add the Vodka, bring to the boil then turn down to a medium heat and let cook for 4 minutes
7. Drain the Penne and add it to the sauce and mix together untill all the pasta is coated
Add the Parmesan cheese and mix well
8. Sprinkle Parmesan and parsley over the top just before serving
