Pesto scrambled eggs and crispy prosciutto

Sheet Pan Crispy Honey Prosciutto
6 slices prosciutto
1/4 cup honey
Pesto Scrambled Eggs
2 teaspoons pesto
6 eggs (3 eggs per person)
3 tablespoons butter
1 teaspoon sour cream
2 tablespoons chives
1 teaspoon salt
1 teaspoon pepper
Prep. Time → 5 min
Cook Time → 23 min
1. Sheet Pan Crispy Honey Prosciutto:
First, preheat oven at 400 degrees.
2. Lay out prosciutto flat on parchment paper lined sheet pan. Place in the oven 15 minutes (or until crispy). While still hot brush honey on prosciutto!
3. Pesto Scrambled Eggs:
First, beat eggs and pour into a pan on medium low with 2 tablespoons butter (No salt or pepper yet because it will hinder them becoming super creamy).
4. Mix gently for for 2-3 minutes until you get wet curds (almost ready but still wet).
5. Turn off the heat and add 1 tablespoon butter, sour cream, salt, pepper, pesto, and chive. Mix to combine.
Finally, mix to combine, top with prosciutto, and enjoy on toast!
