Piri-piri chicken burgers
Recipe by8 chicken tenderloins
Finely grated zest of lemon and juice of 1 lemon
1 TBSP olive oil
2 tsp Portuguese chicken seasoning
20g butter
4 ciabatta rolls, halved
8 butter lettuce leaves
2 tomatoes
1/2 cup chargrilled peppers in oil, drained and sliced
Coriander leaves
Potato wedges, to serve
Lime wedges, to serve
Prep. Time → 10 min
Cook Time → 10 min
1. Put chicken between 2 sheets of baking paper and pound with the flat side of a mallet until 1.5cm thick
2. Transfer to a large ziplock bag and add the lemon zest and juice, oil and seasoning, then massage into chicken to coat. Let stand to marinate for 15 minutes
3. Grill on BBQ at medium-high 4-minutes per side or until done.
4. Spread a little butter on the ciabatta and grill with butter side down.
5. Serve with Avocado Salsa
