Pitta nan
Recipe by3 cups white flour
2 tsp yeast
1 tsp sugar
2 tbsp oil
salt to tast
1. Make yeast with sugar and warm water.
2. Put flour, salt and oil together. Bind with luke warm water, add yeast, beat well.
3. With oily hands make a roll and leave it in a covered saucepan for an hour or so in a warm place. It will rise to double in size.
4. Punch and knead it. Divide it into 8 parts and leave it for one hour, covered with a damp cloth.
5. Roll and bake in oven at 450 deg. for about 5 minutes.
6. For bread, same flour but bind with milk instead of water.
Spread milk on top or milk and egg and sprinkly poppy or sesame seeds and bake
7. Same dough adding 2 tbsp yogurt, leave it overnight.
8. Next morning divide into eight, leave covered with a damp cloth.
9. Roll into oval shape, make long slits with a knife.
10. Rub milk on top, put sesame seeds on top and bake at 450 deg.
