Poached pears in red wine sauce
Recipe by1-1/2 cups red wine
1/2 cup brown sugar
1 Tbsp freshly squeezed lemon juice
1 cinnamon stick
4 ripe but firm Bartlett or Bosc pears
1 tsp vanilla extract
1. In a saucepan, combine the wine with 1 cup water and the sugar, lemon juice, and cinnamon. Bring ot a gentle boil, stirring to dissolve the sugar. Lower the heat and let the sauce simmer for 10 minutes.
2. In the meantime, peel and core the pears and cut them into quarters. Add the pears to the hot liquid, cover, and cook gently for 20 to 25 minutes, until the pears are tender.
3. Transfer the pears to a dish using a slotted spoon.
4. Boil the liquid, uncovered, until it is reduced to about 1 cup. Stir in the vanilla. Spoon the sauce over the pears, cover, and refrigerate until ready to serve. Serve chilled.
