Pol roti, coconut flatbread
Recipe by10 tbsp flour (heapfull)
5 tbsp shredded coconut
1 tsp salt
1 cup warm water, (chicken or vegetable stew)
1,5 tbsp olive oil (or vegetable oil)
vegetable oil for frying
Prep. Time → 45 min
Cook Time → 25 min
1. Mix flour, coconut and salt.
2. Add warm water and combine together until it forms a non sticky dough.
3. Add oil and combine again.
4. On a flat surface, using a rolling-pin roll flatbreads 15 cm in diameter, use flour to prevent the dough from sticking to the flat surface or rolling pin.
5. Heat the frying pan to medium heat, fry each flatbread on both sides for about a minute, each time adding a tsp of vegetable oil.
6. Serve in room temperature.
