Potato layer pie sw

- 1 potato & 1 sweet potato
- 2 garlic cloves
- 2 onions
- 2 carrots
- 1 red pepper
- Fry Light
- 300gm Quorn mince
- 400gm can chopped tomatoes
- 400gm can baked beans in tomato sauce
- a few drops of Worcestershire sauce
- pinch of dried mixed herbs
- salt & freshly ground black pepper
1. Method
1. Preheat the oven to 200C / 400F / Gas 6. Peel & slice the potatoes and place in a pan of boiling water for 6-8 minutes. Drain & set aside.
2. Peel & chop the garlic, onions and carrots and deseed and chop the pepper. Place the onions and garlic in a pan sprayed with Fry Light and fry for 4-5 minutes. Add the Quorn, carrots, red pepper, tomatoes, baked beans, Worcestershire sauce and herbs. Season, bring to the boil and then reduce the heat and simmer for 20-25 minutes.
3. Transfer the mixture to an oven-proof dish. Top the pie with layers of potato & sweet potato, spray with Fry Light and bake for 20-25 minutes until the top is lightly browned.
