Potato salad

Ingredients
5 lbs red potatoes
1/2 green pepper, diced
2 strips celery, diced
2 green onions, diced
mayo
salt
white pepper
1 tomato, sliced
3 boiled eggs cut into chunks
2 boiled eggs sliced

Directions
1. Boil potatoes unpeeled, not too soft. After cooled, peel and quarter, make sure they're not too big.
2. Add the rest of the ingredients except for the 2 sliced eggs and the tomato.
3. Begin to fold in the mayo, 1 tablespoon at a time until it's the right consistency.
4. Place the remaining eggs and tomato on top and serve.
