Potato & sausage stuffing
Recipe by
2 kgs/4.5 Pounds – potatoes – peeled and boiled
2 med onions – chopped and fried
500g/17.6oz pork sausage meat
500g/17.6oz breadcrumbs
Fresh parsley and thyme
Salt and pepper
3 tbsp - vegetable oil (not olive oil)
100g/3.5oz butter
175ml/0.7 cups – milk
Prep. Time → 40 min
Cook Time → 30 min
1. Peel and boil potatoes until soft for mashing.
2. In a large frying pan, fry onions on a medium heat with the oil until soft and brown.
3. Add sausage meet to the onions and fry until cooked through, breaking up with a spatula to a course consistency.
4. Chop the fresh parsley and add to frying sausage meat with the fresh thyme.
5. Add the fresh breadcrumbs to the sausage meat mix and continue to mix together.
6. Fry until the sausage meat has browned.
7. Drain the potatoes.
8. In a large saucepan, add in the butter, milk (or cream if preferred) and seasoning to the potatoes.
9. Mash the potatoes to a creamy consistency
10. When potatoes are ready, add the sausage meat mix into the potatoes (a large spoonful at a time) and mix thoroughly.
11. When the sausage and potatoes have been mixed together, either stuff the turkey or put into an oven proof dish (@ 160C/320F in an fan oven for 30 minutes) until brown and crispy on top. For extra moisture pierce the stuffing multiple times with a fork and pour a cup of the juice from your roast over it before putting it in the oven.
