Potato soup
Recipe by5 - 6 large potatoes, peeled and diced
3 tbsp butter
1 medium onion chopped
1 stalk celery, chopped
chicken broth
1tbsp parsley
Salt and pepper
2 cup milk
Bacon
Cheddar cheese
Sour cream
1. Sauté onions one celery in butter until soft. Add potatoes, spices and enough water or chicken broth to cover. Bring to a boil, reduce heat and simmer until potatoes are tender, about 15 minutes. Add milk, extra butter and bacon. Continue to cook over medium heat until hot, do not boil. With a potato masher, mash some of the potatoes to thicken. Serve with cheese, bacon and sour cream.
