Pumpkin and hemp soup
Recipe by1/2 pumpkin
1 sweep potato
2 carrots
1 onion
1 vegetable stock cube
1 garlic clove
hemp and pumpkin seeds to garnish
seasoning to taste (e.g. salt, black pepper, coriander, thyme, basil, oregano, paprika, cinnamon, and or honey)
Prep. Time → 10 min
Cook Time → 25 min
1. Prep the veg into rough 1" cubes, mince the onion and press the garlic.
2. Fry the onion and pressed garlic in the bottom off the saucepan until it begins to brown.
3. Add the veg, cover with stock and simmer until all the veg is tender(15 min give or take).
4. Blend until smooth and season to taste.
5. Serve topped with pumpkin and hemp seeds.
6. Enjoy
