Pumpkin & broccolli risotto

2 Tbsp butter
1 clove garlic
1 onion, chopped
1 cups arborio rice
1 can Light & Evaporated Milk
1L chicken stock
2 cups chopped pumpkin
2 cups chopped broccoli florets

Prep. Time → 10 min

Cook Time → 25 min

1. Melt butter in pan. Add garlic & onion, cook 1 min.

2. Add rice and stir to combine

3. Add stock, milk & pumpkin & bring to a boil. Reduce to simmer

4. Cover and cook for 15 mins.

5. Add broccoli, salt and pepper and simmer for 5 min (uncovered).
