Pumpkin & chocolate chip muffins
Recipe by1 cup sliced almonds
1 3/4 cups flour
1 tsp allspice
1 tsp garam masala
1/4 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup sugar
2 eggs
1 cup cooked mashed pumpkin
150g butter, melted
1 cup chocolate chips
Prep. Time → 15 min
Cook Time → 20 min
1. Place almonds on oven tray and bake at 180oC for about five minutes or until lightly browned.
2. Sift flour, allspice, garam masala, baking powder, baking soda and salt. Add sugar.
3. In separate bowl, beat eggs and add pumpkin and melted butter. Beat to combine.
4. Fold almonds and chocolate chips into this mixture.
5. Quickly fold in dry ingredients.
6. Three-quarters fill greased muffin pans and bake at 180oC for 20 minutes or until well risen.
