Pumpkin cider soup

2 TB vegetable broth
1 cup onion chopped
15 oz pumpkin
1 cup water
2 cups apple cider
1/4 cup brown sugar
4 tsp cinnamon
1/8 teaspoon nutmeg
1 apple
1/4 tsp pepper
6 tsp sour cream (or vegan sour cream)
chopped chives

1. In a soup pot: Heat onion over medium heat; cook until transparent

2. Add remaining ingredients to the pot. Cook at medium heat, stiring occasionally and bring to a boil.

3. Reduce heat to low, simmer 1 hour

4. Blend soup in batches in the blender
