Ingredients
- 500gm (1lb 2oz) turkey mince
- Small bunch of fresh parsley, chopped
- Fry Light
- 2 large onions, chopped
- 2 garlic cloves, crushed
- 454gm (1lb) carrots, quartered, then cut into chunks
- 397gm (14oz) new potatoes, cut into small chunks **
- 1tbsp paprika
- 500gm jar passata

1. Method
1. Mix the turkey with half the chopped parsley, and fresh ground black pepper to taste, then shape into 12 balls. Heat a large non-stick pan or flameproof casserole sprayed with Fry Light and fry the meatballs for 4-5 minutes, shaking the pan occasionally, until the meat is browned all over.

2. Add the chopped onions, garlic, carrots, potatoes and 284ml (½pt) water to the pan. Bring to the boil, cover and simmer for 15 minutes.

3. Stir in the paprika, passata and half the remaining parsley. Bring to the boil, cover and cook for a further 10-15 minutes or until the potatoes and carrots are tender. Season to taste and sprinkle with the remaining parsley to serve.
