Quinoa with mushrooms and pea dressing
Recipe by500g mixed Mushrooms
1 tbl spoon virgin Olive Oil
2 Garlic Cloves (crushed)
30g Italian Parsley (chopped)
400g Quinoa (cooked)
*Pea Dressing*
225g Frozen or Fresh Peas (blanched and cooked)
50ml Coconut Cream
Juice of 1x Lemon
3 tbl spoons of Mint (chopped)
Prep. Time → 15 min
Cook Time → 5 min
1. Cook the quinoa in water for 15 minutes and drain
2. Heat the olive oil in a pan on medium heat
3. Add the mushrooms, garlic, parsley and cook until the mushrooms turn brown
4. Remove from the heat and combine with the cooked quinoa
5. Purée the peas in a blender and add the coconut cream, lemon juice and mint to the mixture. Drizzle over the quinoa and mushrooms and serve
