Quiona, goldenberry, avocado, and cashew salad
Recipe by1/2 cup organic goldenberries or golden raisins
· 4 cups cooked quinoa (1 cup dry quinoa – red quinoa is very pretty in this dish)
· 2 large avocados
· 1/2 cup raw cashews
· 1/4 cup fresh parsley, chopped
· 4 scallions, green and white parts thinly sliced
· 1 large lemon (juice and zest)
· 1 Tablespoon olive oil
· 1/2 teaspoon ground cumin
· 1/2 teaspoon paprika
· 1 teaspoon salt
1. If using goldenberries, submerge in warm water for 10 minutes to soften.
2. · Meanwhile, place the cooked quinoa, avocados, cashews, parsley, and green onions in a large salad bowl.
3. · Drain the water from the goldenberries and add to the quinoa mixture.
4. · In a separate bowl, combine the lemon juice and zest, olive oil, cumin, paprika, and salt. Pour over quinoa mixture and toss to combine.
