Ingredients
- 675g (1½lb) potatoes, peeled & cut into chunks
- 85g (3oz) reduced fat cheddar cheese, grated**
- 225g (8oz) broccoli florets
- 295g can Campbell's Condensed 99% Fat Free Chicken Soup (7½ Syns)
- 150ml (¼pt) skimmed milk (2½ Syns)
- 300g (10½ oz ) Quorn pieces

1. Method
1. Cook the potatoes in boiling salted water until tender. Drain well, add half the cheese and mash until smooth.

2. Pre-heat the oven to 200ºC (400ºF, Gas 6)

3. Cook the broccoli for 3 minutes, drain, and rinse under cold water. (It could be steamed over the boiling potatoes). While the broccoli is cooking, stir fry the Quorn pieces in a little Fry Light until browned.

4. Whisk the soup with the milk in a 1.8lt (3pt) oven proof dish. Stir in the Quorn pieces and broccoli. Spread the mash over the top evenly. Sprinkle with the rest of the cheese. Bake for 20 minutes or until golden on top.

Serve with vegetables.
