Ratatouille & ham pasta grill sw

- 312gm (11 oz) pasta shapes
- 1 onion, chopped
- 1 red pepper, de-seeded and chopped
- Fry Light
- 1 aubergine, chopped
- 1 courgette, chopped
- 2 x 400gm cans chopped tomatoes with herbs
- 227gm (8 oz) cooked lean ham, diced
- 170gm (6 oz) mozzarella, drained and grated**
- 2tbsp grated Parmesan cheese (3 Syns)
1. Method
1. Cook the pasta according to the packet instructions. Drain. Fry the onion and pepper in Fry Light for 5 minutes until soft.
2. Add the aubergine and courgette and fry for a further 5 minutes. Add the tomatoes and ham and simmer for 15 minutes. Stir in the pasta and 113gm (4 oz) of the mozzarella.
3. Spoon into a flame-proof dish and sprinkle with the rest of the mozzarella and the Parmesan. Grill for 5 minutes.
