Rava Idli/Semolina Idli of Kitchen Snippets - Recipefy

Rava/semolina-2 cups
Yogurt/Curd-1 1/2 cup
Baking soda-1/4 tspn
Salt
Onion-1 chopped
Ginger-1 tspn chopped
Green chilli-1 chopped
Mustard seeds-1/4 tspn
Urad dal-1 tspn
Oil
Warm water-as required

1. Whisk curd /yogurt using a whisk/spatula till they turn smooth and slightly runny.Add rava/semolina to it,mix well and keep aside for 5 mints.

2. Meanwhile,heat oil in a pan and splutter mustard seeds.Add urad dal and saute till they starts to change colour.Then add in chopped onions,ginger and green chillies.Saute till the raw smell goes.The onions need not change colour.
Remove from fire and add this to the rava mixture.

3. Then add baking soda and salt.Add more water if needed.Add water carefully.The batter should be thick.Mix everything well and let the batter sit for 10-15 mints.

4. Grease idli moulds with oil and pour the batter to them.Steam the idlis on medium flame for 10 mints.Remove from fire and let it sit for 5 mints.
Remove the idlis carefully and enjoy with any chutney of your choice.

5. Notes:You can add vegetables like grated carrots or fried cashewnuts to the idli batter.Also to make it more tasty ,you can use ghee instead of oil to saute onions.
