Red tomato, pepper and chili relish
Recipe by24 ripe tomatoes, peeled and chopped
6 red peppers, chopped
6 red chilies, chopped
8 onions, chopped
2 1/2 cups sugar
1/4 teaspoon allspice
1 pint vinegar (1/2 Rice vinegar, 1/2 Cider vinegar)
3 teaspoons salt
1 tbs olive oil
1 teaspoon savory mixed spice
1/2 teaspoon mustard seeds
1/2 teaspoon black onion seeds
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
Prep. Time → 15 min
Cook Time → 300 min
1. heat the oil in the bottom of a large pan and lightly roast the spices
2. Combine the rest of the ingredients and boil, stirring often, until all the free liquid has dissipated and become thick
3. Place into sterilised jars, seal and allow to cool

I made this the other week. It doesn't need to be left for ages like some relish/chutneys and can be enjoyed straight away. I gave some of this to a friend and he loved it. We've gone through 3 jars in the last month!
