Rice & beans stuffed anaheim peppers
Recipe by8 cups water
12 peppers, stems removed
1 1/2 cooked long grain rice
1/2 cup salsa (I use Herdez)
1 cup cheddar cheese, shredded (or vegan nacho cheese works well)
1 can pinto or black beans rinsed
Fresh cilantro
Lime
Prep. Time → 20 min
Cook Time → 18 min
1. Preheat oven 350 degrees
2. Cut peppers lengthwise
3. Boil peppers 4 minutes, remove, rinse under cold water, remove seeds and veins
4. Combine beans, rice, salsa, cilantro, & 1/2 cup cheese,
5. Spray pan with nonstick spray
6. Stuff peppers with stuffing; place in baking pan
7. Cover with aluminum foil; bake 15 minutes
8. Uncover; sprinkle rest of cheese, bake 2-4 minutes uncovered until cheese is melted & bubbly
