Ricotta cheese barfi
Recipe by1 lb. Ricotta cheese
½ lb. unsalted butter
1 ½ cups sugar
½ teaspoon kevra water or rose water
1. Melt butter on low heat, add ricotta cheese, and cook on low heat for 5 minutes.
2. Add sugar and cardamom and cook for another 5 minutes.
3. Now add 1 cap carnation powder at a time and beat well with hand mixture keeping track that the mixture does not burn at the bottom of the sauce pan.
When all milk has been added, beat well so that no lumps are left.
4. Before removing from heat, add kevra or rose water.
5. Set in a buttered dish, sprinkle with pistachio and slivered almonds.
6. When set, cut into pieces.
7. You can decorate with silver paper before serving.
