Roast Sausages and Peppers. of David Le Mottee - Recipefy

2 tablespoons of olive oil
2 red onions, sliced
8 beef sausages
2 red and yellow or orange peppers,
deseeded and cut into large chunks
2 tablespoons cider or white wine vingar
sait and freshly ground black pepper
and a handful of chopped fresh flat-leaf parsley

Prep. Time → 10 min min

Cook Time → 35 min min

1. Preheat the oven to 190
Heat half the oil in a frying pan and cook
the onions for 3-4 min until soft but not browned.
Remove with slotted spoon and place in a roasting tin.

2. Add the remaining oil to the pan and fry the sausages until browned.
Add to the tin along with the peppers and vineger.
Roast for 25 min,
Stirring once, until the sausages are cooked
and the peppers are tender.
Season and serve scattered with chopped fresh parsley.
