Roasted cauliflower with cumin, coriander and almonds

roasted cauliflower with cumin, coriander and almonds of paddy sears - Recipefy

1 head of cauliflower, outer green leaves removed, broken into florets
sea salt
2 tbsp olive oil
a knob of butter
2 teaspoons cumin seeds
2 teaspoons coriander seeds
1-2 dried red chillies
a handful of flaked almonds, broken into pieces
zest and juice of 1 lemon

Prep. Time → 10 min

Cook Time → 20 min

1. Preheat oven to 200°C/400°F/gas 6.

2. Blanch the cauliflower in salted boiling water for a couple of minutes then drain in a colander, allowing it to steam dry.

3. Toss it in the olive oil and the butter.

4. In a pestle and mortar, grind the spices and chillies with a pinch of salt, then mix them with your almonds and put in a hot, dry ovenproof pan to slowly toast them.

5. After a couple of minutes, add the cauliflower.

6. When it gets a nice bit of colour on it, add the lemon zest and juice and mix around well.

7. Fry for about a minute longer then pop the pan into the preheated oven for about 15 minutes to crisp up.

Made this twice... My step-daughter who "doesn't like" cauliflower was asking for seconds almost immediately! after the first preparative steps doesn't take too much work as you just "bang it in the oven" but the lemon is important... really lifts the dish!

I tried this recipe yesterday on my first visit to recipefy as I had a cauliflour sitting in the fridge. I made the roasting pan far too hot and burned the spices! I had to put the whole thing out on the patio to cool quickly before it ignited! Finished the recipe though and it was really tasty. Thanks!!
