Roasted fish with a parmesan crust

420 g plaice, haddock or other white fish fillets (4 fillets)
75g freshly grated parmesan
110g of white bread (slightly stale) cut into cubes (readymade breadcrumbs are also fine and are a useful shortcut)
Handful of fresh curly parsley leaves
50g of melted butter, plus a little extra for brushing
Salt and freshly milled black pepper

To garnish
One lemon cut into quarters
A little fresh curly parsley

You will also need a baking tray 28cm X 40cm and some kitchen foil

Prep. Time → 10 min

Cook Time → 7-8 min

1. Preheat the oven to 230C

2. First of all prepare the baking tray by lining it with foil and brushing the foil generously with melted butter

3. Now wipe the fish with kitchen paper, then lay the fillets on the foil and season them with salt and black pepper.

4. Next place the cubes of bread and fresh parsley leaves in a food processor and whiz to a fine crumb. Then add the parmesan, melted butter, half a teaspoon of salt and some pepper and whiz again to mix them in.

5. Now spread the crumb mixture over the fish fillets, drizzle over a little more melted butter and then place the baking tray on a high shelf in the oven for 7-8 minutes, until the crumbs have turned a golden brown.

6. Serve with the lemon quarters to squeeze over and a sprig of parsley as a garnish
