Roasted veggies

All types of vegetables...whatever you like..some ideas: Butternut Squash, sweet potato, brussel sprouts, cauliflower, onions, parsnip, turnip, beets, carrots etc..

1. Preheat oven to 400F

2. Spray a baking sheet with PAM (OR WHATEVER SUBSTITUTE)...can also use parchment paper or Silpat

3. Cut up the vegetables to whatever size you like but try to be consistent so that they all cook together

4. Drizzle with EVOO or olive oil and toss to coat

5. Add in whatever spices you like

6. Transfer to baking sheet and cook for about 25 mins.

7. Cool and enjoy!..Use as a snack, add to meat, make a veggie roll up! possibilities are endless
