Rolo Chocolate cookies of Lori McAleer - Recipefy

4 pkg (52 g each) ROLO chocolates
1 cup all-purpose flour
1⁄2 cup cocoa powder
1⁄2 tsp baking powder
1⁄2 cup butter, softened
1 cup packed brown sugar
1 tsp vanilla extract
1 egg
1⁄4 cup granulated sugar (optional)

1. Place ROLO chocolates in freezer for at least 6 hours.

2. In a medium bowl, whisk together flour, cocoa and baking powder until combined and no lumps remain.

3. In a large bowl, beat butter until creamy.

4. Beat in brown sugar and vanilla, then egg, until smooth.

5. Stir flour mixture into butter mixture until just combined.

6. Let dough stand for 30 minutes.

7. Preheat oven 350ºF.

8. With hands, roll 1 tbsp of dough for each cookie into balls and place on a waxed paper-lined baking sheet.

9. If using, place granulated sugar in a shallow dish.

10. Remove 1 package of ROLO chocolates at a time from the freezer.

11. Press each ball of dough into about a 2 inch circle.

12. Place a ROLO in centre; wrap dough around ROLO so it is evenly covered.

13. Seal well so there are no cracks.

14. Roll into a ball.

15. Roll in sugar, if desired.

16. Place about 2 inches apart on a parchment paper-lined baking sheet.

17. Bake in center of oven for about 8 minutes or until dry to the touch.

18. Cool on sheet on rack.
