Salted Caramel Butter Bars of Karyn Johnson - Recipefy

2 cups butter, softened
1 cup sugar
1 1/2 cups icing sugar
1 tbsp vanilla
4 cups flour
1-14oz bag caramels, unwrapped (about 40-50 caramels)
1/3 cup whipping cream
1/2 tsp vanilla
1 tbsp coarse salt

1. Preheat oven to 325°F? Line a 9x13 pan with parchment paper, spray lightly with cooking spray.

2. In a stand mixer, combine butter and sugars, beat until creamy. Add vanilla, beat until combined. Mix in flour until a soft dough forms.

3. Press half the dough into the prepared 9x13 pan. Refrigerate the remaining dough. Bake for 15 minutes.

4. Remove from oven while you prepare the caramels. Place the caramels in a microwave safe bowl add the cream and vanilla and microwave for 1 minute. Stir until smooth. Microwave at 20 second intervals, stirring after each interval until smooth.

5. Pour the caramel filling over the cooked crust. (Do your best to pour evenly over crust, as it’s difficult to spread) sprinkle salt over the top.

6. Remove remaining dough from fridge and crumble it evenly over the caramel. Return the pan to the oven and bake until filing is bubbly and the topping is firm and golden brown. About 25-30 minutes.

Let cool completely before cutting into squares.
