Sausage with peppers and potato

2 tbsp olive oil
1 yellow pepper (diced 1" squares)
1 red pepper (diced 1" squares)
1 orange pepper (diced 1" squares)
5 or 6 white potatoes (diced 1" squares)
6 sausage links (cut into 1.5" pieces)
Salt and pepper

Prep. Time → 10 min

Cook Time → 30 min

1. 1. Heat 2 tbsp olive oil in a large skillet over medium/high heat.
2. Cut the potatoes into 1.5" pieces and add to the skillet, seasoning to taste.
3. Cover and reduce heat to low and cook for 20 min.shaking and mixing regularly.
4. Set potatoes aside on a plate.
5. Turn skillet back to medium heat. Add sausage and cook until browned, mixing regularly, but not fully cooked.
6. Add peppers and season to taste. Cook, mixing regularly until sausage is fully cooked and peppers are soft.
