Sauteed red peppers and onions

2 tbsp olive oil
4 red peppers
1 large onion
1/2 tsp salt
1/2 tsp pepper
2 tsp balsamic vinegar
1/2 tsp dried thyme ( 1 tsp fresh)

Directions
1. 1. Heat oil on med-hi. Add peppers and onions and 1/4 tsp salt and 1/4 tsp pepper.
2. Cook for 15-20 min.
3. Add balsamic vinegar and thyme.
4. Turn heat down to low, cook for 2 more minutes.
5. Add remaining 1/4 tsp of salt and pepper.
