1 red onion, finely chopped
1 red pepper, finely chopped
2 cloves garlic, finely chopped
30ml finely chopped fresh fennel
15ml finely chopped fresh mint
30ml finely chopped fresh Italian parsley
juice and rind of 1 lemon
80ml red wine vinegar
100ml olive oil
salt and freshly ground black pepper
Seafood
350g cleaned prawns
350g calamari heads or rings
rocket to serve
Prep. Time → 20 min
Cook Time → 10 min
1. Dressing:
Mix the ingredients. Season with salt and pepper.
2. Seafood:
Put seafood in the basket of a microwave steamer.
3. Pour a little water in the bottom of the steamer and put the basket on top. Cover and steam for about 3 minutes or until the prawns are pink and the calamari is no longer glassy.
4. Pour the dressing over the seafood and leave to cool.
5. Arrange the rocket on side plates and spoon seafood mixture on top.
6. Serve cold
