Sesame-orange spinach

2 bunches fresh spinach (about 1-1/2 pounds)
1 Tbsp canola oil
2 Tbsp low-sodium soy sauce
1 Tbsp lemon juice
2 oranges, peeled and separated into sections
1/2 tsp sesame oil
1 Tbsp toasted sesame seeds

1. Trim the stems from the spinach, was it thoroughly, and pat it dry with paper towels or spin in a salad spinner. Chop it slightly.

2. In a large nonstick skillet, heat the oil over a medium flame. Add the spinach in 2 or 3 batches, cooking each batch until the leaves are wilted. When all the spinach has wilted, stir in the soy sauce and lemon juice and let simmer for about 3 minutes.

3. Chop the orange sections into bite-sized pieces. Add them to the spinach and cook for 1 more minute. Stir in the sesame oil and sprinkle with sesame seeds.
