Shepherds pie
Recipe by500g Minced Lamb
4 lamb stock cubes (based on Oxo)
2 onions finely chopped
2 carrots finely chopped
2 sticks celery finely chipped
2 tbsp worcester sauce
2 tsp mint sauce
1 tbsp tomato puree
1 tin chopped tomatoes(?)
500g sweet potatoes boiled and mashed
1 tbsp veg oil
1 pint water
Prep. Time → 20 min
Cook Time → 30 min
1. Fry onion until it is clear
2. Add carrots and celery, fry for a few minutes
3. Remove from pan
4. Fry mince until it is brown, drain off excess fat
5. Return veg to pan
6. Add stock and water and bring to the boil
7. Add worcester and mint sauce
8. Simmer for five minutes
9. Fill casserole dish with mince mixture and top with mashed potato
10. Drizzle with olive oil and bake in the oven until the top browns - 180 degrees ish
