Simmered endive

Ingredients
4 heads of endive, cut lengthwise into quarters
1/2 cup water
1 Tbsp olive oil
1 Tbsp vinegar (apple cider or white wine would work)
1 Tbsp chopped chives or parsley stems
1/4 cup chopped olives
1 Tbsp soy sauce
Salt and pepper to taste

Cook Time → 10 min

Directions
1. Bring water to simmer in wide, shallow sauce pan
2. Add endive
3. Season with salt and pepper
4. Sprinkle remaining ingredients over endive
5. Cover and simmer until endive is soft - about 10 min
