Simple banana granola

Granola is great for breakfast. After not being able to find a banana flavored granola off-the-shelf, I adapted this recipe after looking through various sources online. Minus the more fancy ingredients, this simplified one tastes great!

Dry
3 cups old fashioned rolled oats
1 cup chopped walnuts
1/2 teaspoon salt

Wet
1/2 cup ripe banana (mashed; approx. 2 medium sized bananas)
1/4 cup melted butter
1/3 cup maple syrup
2 tablespoons brown sugar
1 teaspoon vanilla extract

Prep. Time → 10 min

Cook Time → 30 min

1. 1. Preheat oven to 350F. Line baking sheet with parchment paper.
2. Mix butter, sugar, maple syrup, vanilla extract and mashed bananas in a bowl. Set aside.
3. Mix dry ingredients in a large bowl.
4. Stir in wet ingredients and mix until everything is thoroughly coated and moist.
5. Spread evenly on baking sheet. Do separate batches if necessary to over avoid crowding the oats.
6. Bake for 25-30 mins or until golden brown. Stir occasionally. Be sure to keep an eye on the walnuts as they tend to burn faster.
7. Remove from oven and cool completely. Granola will crisp as it cools.
8. Serve with milk or Greek yoghurt. Stores for up to two weeks.
