Simple chicken goujons with salsa

2 Chicken breasts
2 Weetabix blocks
1 cup plain flour in a bowl
2 eggs, beaten
2 tbsp veg. oil
Salsa
12 sweet plum tomatoes, roughly chopped
I red onion, finely chopped
1 large handful fresh coriander
1 handful fresh mint
1 green chilli (or extra if you like it hot)
juice from 1/2 a lime
juice from 1/2 a lemon
Prep. Time → 10 min
Cook Time → 10-20 min
1. Crush Weetabix into a bowl and add some salt and pepper.
2. Cut chicken breasts into thin fingers then add the oil to a frying pan. Heat oil gently.
3. Dip each finger of chicken into the flour, then egg, then roll them in the Weetabix bowl, ensuring even coverage.
4. Add goujons to the hot pan and cook until golden brown and crispy on the outside.
5. For the salsa: Add Tomatoes, onion, chilli and juice from the lemon and lime to a bowl. Roughly tear up the mint and coriander and add to the mix. This is a really simple salsa I love, but you could use another recipe if you would prefer it, or use something else to spice up the goujons. I usually serve this with chips, but again, this is open to interpretation. This is definitely a feel-good meal, and my family seem to love how juicy the chicken is when I make it. Enjoy!
