Skinny strawberry muffins
Recipe by2 1/2 cups quick 1 minute Quaker Oats
1/2 cup Truvia baking blend
1 1/2 tsp baking powder
1/2 tsp baking soda
1 container (5.3oz) strawberry Greek yogurt (I used Chobani)
2 large eggs
1/4 cup coconut oil, melted
1 1/2 cups strawberries, diced, and divided
1. Preheat oven to 400°F.
2. Line 12 muffin tins with foil liners, or spray well with cooking spray.
3. Place all dry ingredients in the food processor and blend until oats are smooth.
4. Add eggs, yogurt and coconut oil, blend until mixed.
5. Pour batter into a medium size bowl and fold in 1 cup of the diced strawberries. Divide the remaining 1/2 cup diced strawberries over the top of each muffin.
Divide batter into each muffin liner. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
6. (I have substituted lemon yogurt and added the zest of a lime. Very good!)
