Smoked bacon rissoles
Recipe by4-5 slices of bread (slightly stale through preference)
8-10 slices smoked bacon
2 onions (roughly chopped)
1-2 tsps dried sage
salt and pepper to taste
2 eggs (lightly whisked)
a little flour for dusting
a little veg oil
Prep. Time → 15 min
1. Pre-heat the oven to 200C
2. Place all the ingredients in a food processor and blend until the mix comes together
You can do this a few ingredients at a time if you don't have a big processor. Its important to ensure that you have all the chopped the bacon well and got rid of any large bits of onion - just mix well in a bowl afterwards!
3. take golf ball size lumps of the mixture and roll in your hands before dusting with a little flour and flattening into small burger shapes.
4. Place a few at a time in a preheated frying pan with a little oil. Leave for a couple of minutes to form a crust before turning and placing on a baking tray.
5. Once all the patties have been fried, place the baking tray in an oven for 10 minutes to make sure that everything is well cooked through
