10 cups water
1 pound dry lentils
8 ounces kielbasa or pepperoni or spicy sausage
1 large onion, chopped
1 6 ounce can tomato paste
2 1/2 tsp salt
1 tsp oregano
1/4 tsp ground sage
1/2 tsp cayenne pepper
4 tomatoes, cut up (OR 1 can diced tomatoes, about 15 ounces)
3 carrots, sliced
3 celery stalks, sliced
***cooked bulgar wheat or other grain of your choice

Prep. Time → 15 min

Cook Time → 75 min

1. Combine water, lentils, meat, onion, tomato paste, salt, oregano, sage, and cayenne pepper; and bring to a boil.

2. Reduce heat, cover and simmer 30 minutes; stir occasionally.

3. Add tomatoes, carrots and celery; cover and simmer 45 minutes.

4. Meanwhile prepare and cook bulgar wheat or other grain.

5. To serve: place 1/3 cup of bulgar wheat (cooked grain) in each bowl, then ladle soup over and serve hot.
