South beach diet - tortilla soup
Recipe by2 cloves garlic
1 med onion chopped
1tbs olive oil
1 large can chicken broth
4 breasts of chicken cooked and cut in pieces
1 bunch cilantro
2 small or 1 large can of corn drained
2 cans recipe cut tomatoes
1/8th cup chili powder or 1 packet taco season mix
2 cups reduced fat jack or cheddar cheese
Prep. Time → 10 min
Cook Time → 15 min
1. Sauté garlic and onions in lag stock or soup pot until soft.
Add broth, tomatoes, corn, chili powder, and chicken.
Simmer for at least an hour.
Add cilantro and continue to simmer 15 minutes.
Serve garnished with cilantro and cheese.
